For millennia mankind has understood the power of fermentation as an all-natural way to preserve and store food. This natural, undiluted, unfiltered and raw ACV contains all the goodness of apples, enhanced by the fermentation process.
Our product is unlike any other ACV available for sale. No two apples are the same, and no two vinegars are the same! Unlike some other premium brands of ACV, our product is unpasteurised which means it has not been heat treated and it remains raw. This helps to protect the micro nutrients and more importantly, it prevents the mother being destroyed.
You may be wondering, what is the Mother? This is an all natural substance formed by the friendly bacteria in the fermentation process. Also called, the Mother of Vinegar. It is the Mother that gives life to the vinegar, converting it from an alcoholic drink, into an acetic and malic acid rich preserve. Nearly all commercial producers remove the Mother for a variety of reasons, mainly to create a consistent product. We know the Mother is an important part of the vinegar that contains nutrients and friendly bacteria, this is why we leave it intact. Because the Mother is a natural substance, you can expect a varying amount in each bottle.
It can take many years for the Mother to naturally ferment the apples. Normally this takes at least two years from picking the apple to have a good quality finished product.
Our Apple Cider Vinegar is produced naturally on a small scale using only the best, fresh and hand gathered organic cider apples. This is the main benefit of this product, it has been made purposefully and not with second rate dessert apples that did not make it to the supermarket shelves.
The qualities of Devon Apple Cider Vinegar are plain to see. You will notice the deep rich golden colours of our product. This is because it is possibly the only brand of ACV that does not add water to dilute the cider. Fresh cider apples are crushed and the pulp is taken away to be used in animal feeds. Commonly the pulp is rehydrated to be used in a second press, we use first press only! Using only virgin pressed apples is colloquially known in Devon as Cyder. This is the difference between cider and cyder however the name cyder is not well known, hence why this product is described as cider and not cyder. Real cyder vinegar must be first press from fresh cyder/cider apples.
