Lecithin one of those things you see on ingredients lists all the time but are never actually sure what it is or what it does. Well, prepare to be enlightened (and a little disgusted);
"Lecithin is a generic term to designate any group of yellow-brownish fatty substances occurring in animal and plant tissues."
Food grade Lecithin is derived from sources such as soybeans, eggs, milk, marine sources, rapeseed, cottonseed, and sunflower. It has low solubility in water and is an excellent emulsifier. It has hundreds of uses in the food industry but is mainly used as a natural emulsifier or lubricant.
Lecithin is a source of essential nutrients choline and inositol. Clinical studies have shown intake of lecithin can benefit acne, improve liver function and lower cholesterol.
